This month we’re focusing on some creative, different ways to fix vegetables. If you’re like most of us, you get sick of eating the same old, same old. These two easy, quick vegetable recipes are just a sampling from an entire section of vegetable recipes in Dr. Joseph Mercola's new Total Health Cookbook and Program, a book we highly recommend for its extensive dietary insights in Part One and the over 150 very healthy and delicious recipes in Part Two. (No, we did not spell the name wrong, this “like mashed potatoes” dish will surprise you. Be sure to try it.)
Serves 4
Prep time: 15 minutes

1 head fresh cauliflower, about 1 1/2 lbs.
2 Tbsp organic butter
1/4 cup unsweetened rice milk or if you’re able to tolerate small amounts of dairy use organic half and half
1/4 tsp sea salt
2-3 grinds black pepper

Steam cauliflower until tender in steamer basket or small amount of water in saucepan. Cutting up head into pieces allows it to cook faster.

In food processor, blend cauliflower, butter, rice milk or cream, sea salt and pepper, until smooth.

Transfer to serving bowl. Serve immediately.

Serves 4
Prep time: 10 minutes

2 Tbsp. organic butter or coconut oil
1 medium head green cabbage, cut into 1/2-3/4 inch pieces
1 tsp dill seeds
1/2 tsp sea salt
4-5 grinds fresh black pepper
2 tsp dried dill weed

Heat butter or coconut oil in large skillet over medium heat.
Add cabbage chunks and dill seeds. Saute cabbage over medium high, stirring frequently, until cabbage is translucent and starts to wilt, approximately 6-7 minutes. It’s okay if it gets a little browned.
Remove from heat, stir in sea salt, fresh black pepper and dill weed. Serve immediately.
