This dish evolved on one of those I-donít-have-time to cook days. I just tossed everything together in a pot and put my feet up for 25 minutes. A steamer basket was the magic ingredient. I didnít mind a bit having one pot to wash.

  • 2 sweet potatoes, scrubbed and thinly sliced
  • 2 apples, thinly sliced
  • 2 lamb or pork chops
  • 12 asparagus stalks, tough ends removed
    - OR -
2 cups chopped cabbage or broccoli

Place collapsible steamer basket in a 5-quart Dutch oven with ĺ in of water in the bottom. Arrange sweet potatoes and apples in basket. Put the chops on the top. Cover tightly and steam for 25 minutes.

Add the vegetable of your choice and team another 10 minutes or until everything is tender.
